Recipe: Jerusalem Artichokes & Kale Salad with Grapefruit and Meyer Lemon Dressing

Foodsmiths Recipe by Perth Pepper and Pestle

 

 

This is a fabulous salad or spring sidedish for pork, shrimp, but especially fish! Enjoy!

You will need...

7 Jerusalem artichokes, very thinly sliced or julienned
6 tbsp Perth Pepper and Pestle Ruby Red Grapefruit Red Pepper Jelly
1 tbsp Foodsmiths’ Organic Extra Virgin Olive Oil from our Bulk
pinch of granulated garlic
1/2 tsp coarse sea salt
5 medium Kale leaves, chopped
zest of Meyer lemon


Put it together...

Add all ingredients in a bowl and fold lightly until all ingredients are combined. Garnish with lemon zest and a sprinkle of sea salt. Makes 2 cups.
