I usually freeze 4 of the chicken thighs in the marinade for another quick and handy meal. They are very nice served with rice and a side of roasted vegetables, or a cucumber salad.

For a make ahead, easy meal place the chicken thighs in the marinade, place in a ziplock bag or shallow container and freeze. Quick meal for a work night, pull out of the freezer and place in the fridge in the morning. Thawed and ready to grill when you get home.

This is one of my favourite skillet suppers. I love to use chicken thighs in a recipe like this because they are so juicy and flavourful! These thighs from our new fresh meat selection did not disappoint.
