Almond and Currant Cookies

Ingredients

2 c flour

1 tsp baking powder

¼ tsp salt

¾ tsp cardamom (or cinnamon or nutmeg)

¾ c butter, salted

1 c sugar

1 egg
-
1 tsp vanilla

¾ c toasted sliced almonds (or pecans)

½ c currants (or raisins or cranberries, chopped)
Directions
Combine the flour, baking powder, salt and cardamom.
Cream butter and sugar until light and fluffy. Add egg and vanilla. Add dry ingredients in thirds, mix until it makes a soft dough. Stir in almonds and currants.
Divide in half, wrap in plastic wrap and refrigerate for 1/2 hour.
Roll about 1/4" thick and cut with a cookie cutter of your choice.
Bake at 375° for 10-12 minutes, or until brown around the edges and firm to the touch.
(You could add orange or lemon zest to this recipe as well. They are great alongside a bowl of ice cream with strawberry sauce, or just on their own).
