Apple Cranberry Muffins

Ingredients

• 1 1/4 c brown sugar

• 2/3 c oil (coconut is good depending on the fruit you choose)

• 1 tsp vanilla

• zest from 1 orange or lemon

• 1 c buttermilk 

• 2 1/2 c flour

• 1 tsp baking soda

• 3/4 tsp salt

• 2 c fruit (berries, peaches, etc.)
