Baked Chicken Katsu

I made this recipe with chicken thighs which are cost effective and quite flavourful.
Ingredients

1 c panko crumbs

1 tbsp coconut or canola oil

2 boneless skinless chicken breasts or 4 boneless skinless chicken thighs

salt and pepper

¼ c flour
-
1 egg
-
½ tbsp oil
-
2 tbsp Worcestershire sauce

1 tbsp sugar
-
2 ½ tbsp ketchup
-
1 tbsp tamari or soy sauce
Tonkatsu Sauce
Directions
Preheat the oven to 400°F
Combine the panko crumbs and coconut or canola oil in a skillet. Toast over medium heat until golden brown. Transfer to a shallow bowl to cool.
If using the chicken breasts cut them in half horizontally then pound them to 1/2 " thick. If using thighs pound them to an even thickness.
Season both sides with salt and pepper.
Whisk the egg and ½ tbsp of oil in a shallow bowl, place the flour in another shallow bowl. Coat the chicken with flour, then egg and last coat with the panko crumbs.
Line a baking sheet with foil, then place a wire rack on the foil. Arrange the chicken on the wire rack. Bake for 20-25 minutes or until it is 165° inside.Remove and slice. Drizzle with Tonkatsu Sauce.
Serve with rice, cabbage slaw and sliced tomatoes.
For the Tonkatsu sauce, combine all ingredients, whisk until smooth.
