This chicken was tender, crispy and so tasty. Great with roasted potatoes and a salad.
You could also serve this over pasta with tomato sauce.
Baked Garlic Parmesan Chicken

1 pkg boneless skinless chicken breasts

4 tbsp melted butter

2 tbsp olive oil

1-2 garlic cloves minced

1 c panko crumbs

2/3 c grated parmesan cheese

1 tsp dried basil, oregano or italian seasoning

¼ tsp smoked paprika

1 tsp salt

¼ tsp pepper

2 tbsp finely chopped italian parsley
Directions
Preheat the oven to 425°F
Mix the butter, oil and garlic together and place in a shallow bowl.
Combine panko crumbs, parmesan and remaining seasonings in a 2nd shallow bowl.
Slice each chicken breast in half lengthwise to make thin cutlets. Dip first into melted butter, then into the crumbs to coat. Place the chicken onto a parchment paper lined baking pan.
Bake for 20 minutes, gently turn over after 10 minutes.
