Baked Tomato and Feta Pasta
Rated 5.0 stars by 1 users
After a busy day and a bowl full of cherry tomatoes from the garden as well as a lot of fresh basil to use up, I decided to try the internet recipe for baked tomato and feta pasta. The verdict, very easy and very yummy!
I did 1/2 the recipe because that's all the feta I had on hand, but here is the full recipe.
Ingredients
-
8 oz. of pasta
-
2 pints of cherry tomatoes
-
8 oz. piece of feta cheese
-
½ c olive oil
-
¼ tsp sea salt
-
¼ tsp pepper
-
2 garlic cloves, minced
-
¼ c fresh basil, thinly sliced
Directions
Preheat the oven to 400°. Place the tomatoes into an oven safe baking dish, mix with olive oil, salt and pepper. Place the feta in the centre of the tomatoes, turn it over a couple of times to coat with the oil. Bake for 30-35 minutes.
While the tomatoes are cooking, cook the pasta, drain.
Remove the tomatoes, stir in the garlic and basil. Add the pasta to the baking dish, mix well and serve.
Slices of crusty bread to soak up the juice are a great.
The next time I make this I am going to add thinly sliced onions to bake with the tomatoes and maybe some chili flakes for a little heat.
