Buffalo Chicken Stuffed Peppers

These healthy Buffalo Chicken stuffed peppers are bursting with flavour. The heat from the hot sauce, and the perfectly crispy-tender bell pepper come together perfectly in this easy low carb dinner. And they do make a dinner, quite filling.
Serve with a side of gluten free rice or cauliflower rice.
Ingredients

3 multi-colored bell peppers halved lengthwise, and hollowed out

12 oz cooked shredded chicken

3 oz cream cheese softened

⅓ cup + 2 Tbsp shredded cheddar cheese divided

¼ cup + 2 Tbsp diced green onion divided

½ cup buffalo sauce such as Frank's Hot Sauce

1 ½ tsp ranch seasoning

Ranch dressing for drizzling
Directions
Preheat the oven to 375°F.
In a large mixing bowl, combine the chicken, cream cheese, 1⁄3cup shredded cheese, 1⁄4cup diced green onion, buffalo sauce, and ranch seasoning.
Stir until the ingredients are combined and chicken is fully coated in the buffalo sauce.
Scoop about 1⁄4-1⁄3cup of the buffalo chicken mixture into a hollowed out pepper. Repeat with the other five halves.
Place stuffed peppers on a rimmed baking sheet. Sprinkle with the remaining 2 Tablespoons of cheese and cover with foil.
Bake for 45 minutes. Remove from the oven, plate and drizzle with ranch and sprinkle with diced green onion.
Recipe Note
I like my peppers more tender-crisp so I baked them for only 35 minutes, but it's to taste. You can also wrap them in tin-foil and put them on the barbeque.
