An easy to make chicken that looks and tastes a little fancy.
Chicken Breast with Mustard Sauce

Creamy chicken breast served with roasted potatoes or rice and green beans.
Ingredients

2 chicken breasts, cut in half lengthwise to make 4 thin pieces

3 leeks, thinly sliced

2 garlic cloves, minced

2 tbsp olive oil

1 tbsp chopped rosemary

1/2 c dry white wine

1 1/2 c chicken broth

1 tbsp flour

2 tbsp water
-
2 tbsp whole grain mustard

1 tbsp butter
Directions
Heat the oil in a large skillet. Season the chicken with salt and pepper.
Sauté the chicken on both sides for about 5 minutes per side and until nicely browned. Remove and set aside.
Add the leeks and garlic, cook until the leeks are tender. Add the wine to the skillet and cook for 3 minutes. Add the broth and bring to a boil.
Mix the flour and water until well blended. Whisk into the broth and cook until it thickens. Add the chicken back in to heat and cook through.
Add the butter, season if needed.
Serve with roasted potatoes or rice and green beans or your choice of vegetable.
