Couscous Salad with Honey Basil Vinaigrette

A great hot-weather side dish, perfect with BBQ
Ingredients

1 c couscous
-
1 1/3c boiling water

1/2 c diced red onion

1 c chickpeas

1/2 c diced red pepper

1 c chopped arugula or spinach

1/4 c olive oil

2 tbsp red wine vinegar (or your favourite flavour)

1 1/2 tbsp honey
-
2 tsp finely chopped fresh basil

salt and pepper
Honey Basil Vinaigrette
Directions
Place the couscous in a bowl. Pour the boiling water over top. Stir and cover with a lid or plastic wrap. Let sit for 5 minutes, then stir.
Combine rest of ingredients with the couscous in a large bowl.
Whisk together vinaigrette ingredients. Add to couscous and stir to combine.
