Creamy Mushroom & Kale Gnocchi

Ingredients

1 tbsp olive oil

1 tbsp butter

8 mushrooms, sliced

1/2 onion, sliced

1/2 bunch kale, cut into bite sized pieces

2 garlic gloves, finely chopped

1/4 cup white wine or vegetable broth

1 pkg cherry tomatoes
-
1 pkg gnocchi, cooked according to package instructions

1/4 cup grated parmesan cheese
-
1 tsp salt
-
1 tsp pepper
-
1/4 cup heavy cream
-
1/2 cup vegetable broth
Sauce
Directions
Melt oil & butter, saute mushrooms, onions & kale until soft.
Add garlic, saute 2 mins.
Add white wine or broth, cook 1 min.
Add heavy cream & broth.
Add tomatoes & gnocchi, stir to combine & heat through.
Add Parmesan, salt & pepper.
