Stuffed Turkey Patties

You can change the fillings to personal preference. Served with a salad it makes a tasty meal.
Ingredients

1 pkg ground turkey, thawed

salt and pepper

1/2- 3/4 c grated cheddar

4 mushrooms, thinly sliced

1/2 c onion, thinly sliced

2 c baby spinach, chopped

1/2 c roasted red pepper, cut into strips

1/3 c breadcrumbs

1/3 c grated Parmesan

1 egg beaten
Directions
Sauté the mushrooms and onion in olive oil until softened. Add the spinach and cook until it is wilted. Season with salt and pepper.
Divide the ground turkey into 4 portions and place onto parchment paper. Flatten out into a thin patty, season with salt and pepper. Place 1/2 of the cheddar onto one half of the 4 portions. Spoon the mushroom, onion mixture over the cheese. Place 4 or 5 strips of red pepper over the filling, and top with the remaining cheese.
Cut the parchment to separate the patties. Carefully fold over to make a half moon shape. Place onto a parchment lined baking tray. Brush the top with the beaten egg. Combine the breadcrumbs and parmesan, sprinkle over the top.
Bake at 375° for 20 minutes.
