Curried Carrots

Ingredients

2 lbs carrots, washed peeled and sliced diagonally into large chunks

3 tbsp oil

1 tbsp curry powder

1/2 tsp salt
-
honey to taste (1- 1 1/2 tsp)

1 tbsp cilantro
Directions
Combine carrots, oil, curry powder and salt.
Roast at 425° for 20-25 minutes. Toss with honey, sprinkle with cilantro.
