Ingredients

1 cup farro, cooked

1 cup diced pepper

1 carrot, grated

2 green onions

1 cup spinach, chopped

4 tbsp fresh dill, or mint, or chives

Zest from orange

3 tbsp orange juice

1 tbsp olive oil

1 tbsp vinegar (apple cider or white wine)

1/4 tsp salt/pepper

1/3 cup toasted pumpkin seeds

Option: Feta or diced cheddar
Dressing
Garnish
Directions
Cook farro according to directions. Toss with 2 tbsp of dressing. Let cool.
Mix all ingredients in a large bowl. Add dressing and mix well.
Sprinkle with pumpkin seeds. Option feta or diced cheddar.
Recipe Note
Could use quinoa or brown rice for gluten free option.
