Garlic Scape Dip

½ c. sour cream

½ c. mayonnaise or greek yogurt

8 to10 garlic scapes, trimmed and cut into 1” pieces

fresh lemon juice

salt and pepper
Directions
Combine sour cream and mayonnaise or greek yogurt in a bowl.
Place the scapes in a food processor and buzz until finely chopped. Add to the bowl and stir.
Season with salt and pepper and a squeeze of fresh lemon juice.
Stir and let sit for at least one hour or overnight to let the flavours combine. Serve with fresh vegetables, crackers or chips.
