Baked in the oven and ready to eat in under 30 minutes. This meal is high protein, low-carb, and gluten-free.

Ingredients

4 chicken breasts

1 cup Parmesan cheese

1 cup pork rinds (sea salt)

½ cup mozzarella cheese (add a handful of cheddar if you like)

2 eggs, beaten

1.5 TBSP Italian seasoning

1.5 cups heavy cream

1 TBSP butter

1/2 cup grated Parmesan cheese

1 tsp salt (or to taste)

Directions
Chicken Parmesan
Preheat the oven to 200°C/400°F. Pour the olive oil into a large baking pan so the bottom is completely covered.
Place each chicken breast between a sheet of plastic wrap or parchment paper. Using a meat mallet or rolling pin pound the chicken until it is an even thickness, about 1/2 inch thick. Salt and pepper the chicken if desired. (slice it in half if you have large pieces)
Next, crack your eggs into a bowl and whisk them together with a fork to make an egg bath (egg wash) for your chicken. In a separate bowl mix together the crushed pork rinds, grated Parmesan cheese, and Italian seasoning and combine.
Dip each chicken breast into the egg so that each side is coated with the egg. Then dip the chicken into the bowl with your pork rind mixture and make sure each side is completely coated.
Lay the coated chicken breast flat in the baking pan with the olive oil at the bottom. Repeat until all four chicken breasts are covered and arranged in the pan. Bake in the oven for 15-17 minutes and the internal temperature reaches 74°C/165°F. Then turn the oven to broil to let the chicken crisp on each side for 2-3 minutes.
Remove the chicken from the oven. Spoon your cream sauce over each chicken breast and then top with mozzarella cheese. Place back in the oven under the broiler for another 10 minutes to allow the mozzarella cheese to melt. Remove from the oven and serve. Enjoy!
Cream Sauce
Melt the butter in a pan over medium-low heat.
Pour in the heavy cream and bring to a simmer and let simmer for 5 minutes.
Reduce heat to low and gradually add the grated Parmesan cheese while whisking or stirring gently.
Continue to stir until the cheese is melted and the sauce is smooth.
Add salt to taste, starting with 1 teaspoon.
