Irish Apple Cake with Whisky Custard Sauce

Ingredients

½ c unsalted butter

½ c sugar

3 tbsp buttermilk

1 ¼ c flour

1 tsp baking powder

1 tsp cinnamon

pinch of salt

3 apples, peeled and thinly sliced (I used honeycrisp)

¾ c flour

¼ c large flake oats

6 tbsp unsalted butter, small pieces

½ c brown sugar

3 egg yolks
-
3 tbsp sugar
-
¾ c milk
-
1 ½ tsp whiskey (or vanilla)

Streusel Topping
Combine the streusel ingredients until it is coarse crumbs. Refrigerate until ready to use.
Irish Apple Cake
Preheat the oven to 350°.
Combine the butter and sugar, mix until light and fluffy. Add eggs one at a time. Add the dry ingredients and buttermilk.
Place in a 9" pan lined with parchment paper. Top with sliced apples and streusel. Bake for about 45 minutes, until a toothpick comes out clean. Let cool in the pan for a few minutes before removing.
Sprinkle with icing sugar, or serve with whiskey custard sauce. The cake is best served slightly warm.
Whiskey Custard Sauce
Combine the yolks and sugar. Simmer the milk over medium heat until warm. Drizzle a little of the warm milk into the egg, stirring constantly. Add a little more warm milk to the yolks and then add all of it back into the pan of milk. Stir constantly over medium heat until it thickens.
Remove and add the whiskey or vanilla. Pour through a fine sieve. Cover with plastic wrap and refrigerate until cool.
