Lobster Chowder

Ingredients

1 frozen Lobster, thawed, meat and roe removed from shell, chopped (leave claws whole if possible)

2 medium yellow potatoes, peeled, diced and cooked

1 1/2 cups onion, or leeks, diced

1 garlic clove, minced

2 tbsp butter

1-1 1/2 cups corn
-
1 tsp celery salt

1 cup white wine or broth
-
1 cup water
-
1 cup 35% or 10% cream

3-4 4 tbsp chopped fresh basil

1/2 tsp salt

Fresh ground pepper
Directions
Melt butter, sauté onion and garlic for 5-7 minutes. Add wine or broth.
Add corn, potatoes, seasoning, water and cream. Simmer until heated through. Add the chopped lobster and roe, stir and heat through. Season if needed. Ladle into bowls, top with lobster claws and fresh basil.
