Ingredients

4 oz meat from 1 frozen, cooked lobster, thawed, shell removed and cut into chunks

1 ½ tsp of chopped tarragon or chives

1 tsp finely diced shallots

1 tbsp diced celery

1 tbsp mayonnaise

salt and pepper

1 tsp lemon zest
-
2 sausage or hot dog buns, lightly toasted/grilled and buttered

Lettuce leaves
Directions
Combine first 7 ingredients. Place lettuce in bottom of the buns, top with lobster mixture. Serve with a salad on the side.
