Marinated Tomatoes

The fresh taste of tomatoes accented with olive oil and spices, rounded out with the delicious flavour of parmesan. This easy recipe is a great side dish with grilled meat, chicken, or shrimp. Serve with crusty bread to soak up the juices.
Ingredients

2-3 tomatoes sliced 1/2" thick

4 tbsp olive oil

2-3 tbsp red wine vinegar

1 garlic clove, finely chopped or grated

1/2 tsp sea salt

1/2 tsp pepper

3 tbsp grated parmesan cheese

2 tbsp chopped fresh basil or parsley
Directions
Arrange the tomato slices in a 9x13" pan or plate in a single layer.
Whisk the oil, vinegar, garlic salt and pepper. Pour over the tomatoes. Cover and let sit at room temperature for 2 hours. Top with the parmesan and basil before serving.
