Pineapple Chicken

This pineapple chicken skillet is such an easy recipe to make and it takes just a little over half an hour to make.
Ingredients

1 tbsp olive oil

6 chicken thighs
-
½ tsp onion powder
-
½ tsp smoked paprika
-
½ tsp garlic powder
-
1 tsp chili powder
-
½ small pineapple, peeled and cut into chunks

2 spring onion, sliced
-
salt and black pepper to taste

2 garlic cloves, minced
-
2 tbsp raw honey
-
1 tbsp coconut aminos (or soya sauce)

2 tsp mustard

1/3 cup no sugar added, 100% pineapple juice

Directions
Season the chicken with onion powder, garlic powder, smoked paprika, chili powder and salt and black pepper to taste.
Heat the olive oil in a large skillet over medium.
Add the chicken thighs and cook until golden brown on each side.
Transfer the chicken to a plate.
Add the pineapple juice, honey, coconut aminos, mustard, garlic cloves and chili powder. Stir to combine.
Season to taste with salt and black pepper.Bring to a boil then reduce the heat.
Return the chicken thighs to a skillet. Spoon the sauce over chicken.
Cook over medium heat for 20 minutes or until cooked through.
Add the pineapple chunks and spoon the sauce over the pineapple.
Cook for 2 – 3 minutes, stirring from time to time.
Sprinkle with sliced spring onion and serve.

I served it over a bed of organic basmati rice that is available at Foodsmiths in the bulk section.
