Garlic Scape Pesto will refrigerate well for several weeks in a sealed jar. It can also be frozen and used for winter soups and stews. Delicious with pasta, brushetta, pizza, chicken, shrimp or your favourite dish!
2 cups garlic scapes
¼ cup parmesan cheese
¼ cup olive oil
2 tbsp soft butter
Sea Salt and Pepper (to taste)
Chop the garlic scapes into 3 inch lengths and puree with parmesan cheese in food processor.
Slowly add the olive oil until all the oil is combined into the garlic
Add butter, salt and pepper and process until smooth. Store in an air-tight jar in the refrigerator.
