Sun Dried Tomato Chicken

Ingredients

2 chicken breasts, sliced lengthwise and cut in half making 8 pieces

salt and pepper

1/2 tsp smoked paprika

1/4 c flour

1/2 c sun dried tomatoes, cut into strips

3 tbsp oil (if using sun dried tomatoes in oil, use the oil from the jar)

4 garlic cloves, thinly sliced

4 mushrooms, sliced
-
1/2 c thinly sliced onion
-
1/2-1 tsp chili flakes
-
1/2 c dry white wine
-
1/2 c broth
-
3/4 c 10% cream
-
2 c baby spinach
-
1/2 c grated parmesan cheese
-
1/4 c fresh basil sliced

Directions
Mix the flour and seasonings together. Coat the chicken, shaking off the excess.
Heat the oil and cook the chicken for 3-4 minutes per side, until browned. Remove and keep warm.
Add the garlic, onion, mushrooms and chili flakes. Cook until the onions and mushrooms are soft. Add the sundried tomatoes, then the wine and cook for about 2 minutes. Add the broth and simmer for 3 minutes. Add the cream, spinach and parmesan, sauté until it thickens a little. Add the chicken and heat through. Taste and season if needed. Right before serving add the fresh basil and stir to combine.
Serve with a warm baguette or cooked pasta.

Recipe Note
If you use dried tomatoes, soak them in warm water for 15-20 minutes before adding. This will make them much more delectable.
