This makes moist, flavourful meatballs in a creamy curry sauce.

Ingredients

1 pkg ground turkey or beef (approx 1lb)

1/2 c shredded zucchini

1 carrot grated

1/2 c panko breadcrumbs

2 green onions, finely chopped

2 tsp grated garlic

1 tsp grated ginger
-
1/4 tsp cayenne pepper

1 tbsp tamari or soy sauce

1 egg
-
zest of 1 lime

1 red pepper, sliced

1 tsp garlic

1 tsp ginger

2 tbsp tamari

1 can coconut milk
-
2 tbsp red Thai curry paste (if you don't like spicy start with half)

1 tbsp honey or brown sugar

2 green onions, sliced

Directions
Thai Curry Meatballs
Combine and shape into meatballs, about 1 1/2 tbsp per meatball. Bake at 350° for 15-30 minutes.
Sauce
Sauté the peppers in a little olive oil for 5 minutes. Add the remaining ingredients, simmer for 10 minutes.
Add the meatballs into the sauce and heat for 10 minutes. Add the lime juice and cilantro.
Garnish
Top with cilantro and juice from ½ lime.

I used a small cookie scoop to measure out the meatballs.
