Za'atar is a middle eastern spice blend. You can buy it ready made or make it yourself. It's a great seasoning on chicken or flatbread and used in salads as well. This recipe is not an authentic one but can be used if you cannot find it ready made.

We enjoyed this savoury chicken alongside a tangy salad for a perfect combo.

Ingredients

2 tsp dried thyme

2 tbsp sesame seeds

2 tsp ground sumac (if you can't find sumac lemon zest can be substituted)

1/2 tsp salt
-
1/4 tsp cumin
-
1 1/2 lb chicken breast (you can cube for skewers or leave whole)

2 tbsp Za'atar
-
3 tbsp olive oil
-
pinch of salt
-
1 medium tomato, diced
-
2 small cucumbers, diced
-
1/4 c thinly sliced red onion

1/2 green pepper, diced
-
2 tbsp Italian parsley, chopped

4 tbsp olive oil
-
Zest from 1 lemon
-
2 tbsp lemon juice
-
1 garlic clove, minced
-
1 tsp pomegranate molasses (optional)
-
1 tsp honey
-
salt and pepper

Directions
Za'atar Chicken
Combine the ingredients and marinate at least 30 minutes or up to overnight.
Grill until the chicken is 165°.
Serve with tzatziki or a garlic sauce.
Dressing
Mix the dressing. Combine the salad ingredients.
Pour the dressing over top and mix.
Try half of the dressing first, you may not need it all.
Top with feta if desired.
