Recipe: Caramelized Onion & Fig Salad

"This salad has a complex, layered flavour, inspired by gluten-free and dairy-free options that are also delicious and uncompromising in taste!"

You will need...

1-1/4 lbs red onions, thinly sliced
1/2 cup fresh figs or 1/4 cup dried, chopped into pieces
2 tbsp olive oil, available in our bulk
2 tbsp balsamic vinegar, also available in our bulk
1 tsp cinnamon
Organic Greens
1 - 2 carrots, grated
Optional: Chevre (unripened goat cheese) or feta


Put it together...

To prepare the onion & fig mixture: Heat oil in heavy skillet over medium high heat. Add onions & reduce heat to lowest setting. Cook for 15 minutes. Stir occasionally, (caramelizing onions should be a slow process!) Add figs and continue to cook for another 15 minutes, stirring frequently.

During the last 5 minutes of cooking add balsamic vinegar. Turn off heat and add cinnamon and let sit on burner for an additional 5 minutes. Remove from heat.

Prepare greens and arrange in a bowl or plate. Caramelized onion and fig mixture can be added warm, room temperature, or cold. It will keep in the fridge for up to 3 days. For presentation, the mixutre looks best nested in the middle of the greens with grated carrot arranged around the outside. Add your choice of goat cheese, if desired. A fulfilling meal of goodness! My preferred salad dressings to drizzle lightly over the dish: Mackey's Maple Vinaigrette or Maison Orphee's Maple and Dijon. Enjoy!
