Foodsmiths Recipe by Don & Claire

Simple but very pretty and so yummy! Roll the balls so they are about bite size.

You will need...

Cashews, processed into powder to measure 2 cups
1/2 cup raisins, finely chopped
1/2 cup coconut, finely shredded
1/2 lemon zest, and juice of 1/2 lemon
1/2 tsp almond extract
1/2 cup HIghlands honey
2 tsp cinnamon

Put it together...

Mix ingredients well. Roll into balls, then roll balled in coconut. Keep tightly covered in fridge.
