Heather's kids love this recipe! It's an easy way to give the whole family a serving of vegetables masquerading as pizza!
You will need...
1 medium head cauliflower
1 cup grated parmesan cheese
1 cup grated marble cheese (or cheese of your choice)
1/2 cup of cheese of your choice (optional)
Put it together...
Finely chop cauliflower in food processor or grate on cheese grater. Microwave, covered, for 7 minutes on high then let sit for 5 minutes. Stir in eggs and cheese, spread out on pizza stone or pan covered with parchment paper. Place in pre-heated 400 degree oven for 20 minutes, take out and sprinkle with 1/2 cup of cheese of your choice (if desired) then place back in oven for about 15 minutes or until golden brown. Slice bread-stick style and enjoy. This recipe also makes a great pizza crust for an assortment of toppings.
