Recipe: MojiTea!

Foodsmiths Recipe by Marilyn

Mojito and Long Island Iced Tea; two fantastic summer drinks we all start fantasizing about in the Spring! We at Foodsmiths declared, "Hey wait a minute! What if we combined these two great drinks?" And the MojiTea was born! Naturally, we do this mocktail the Foodsmiths way, with fresh, healthy ingredients: limes, fresh Ontario mint, Agave syrup instead of sugar and Fever Tree Tonic Water instead of club soda! (Fever Tree is Chef Jamie Oliver's choice!) Try this refreshing, minty mocktail on your deck, patio or dock any time of the day (and add a splash of rum when the sun goes down!)

You will need...

8 cups boiling water
6 Uncle Lee White Tea Bags
1 Bunch Fresh Mint
¼ cup Wholesome Organic Agave Syrup
6 limes
1 bottle Fever Tree Tonic Water

Put it together...

Pour boiling water over tea bags and mint. (Reserve some mint leaves for garnish) Let steep for 10 minutes. Remove tea bags. Stir in  Wholesome Organic Agave Syrup. Let mint, agave and tea cool completely in fridge.
After tea is cold add the juice of 4 freshly squeezed limes (apprx. 1/3 cup). Slice one lime into rings and add to tea. Add a few more sprigs fresh mint. Stir gently.
Add ice (I like frozen lemon or frozen lime wedges instead of ice) to a tall glass, pour tea ¾ the way up the glass, add a few splashes of Fever Tree Tonic Water, and garnish with a slice of lime and some mint leaves.
