Recipe: Quinoa Breakfast Bars

Moist and satisfying, these breakfast bars created by Koreen are bursting with healthy ingredients from our bulk bins, sweetened naturally with honey. Super delicious and nutritious, store these yummy bars, well covered, in the fridge.

You will need...

2 cups cooked quinoa, drained
1/2 cup almond flour
1/2 cup ground flax
1/2 cup spelt flour
1/2 tsp baking soda
2 mashed bananas
1/4 cup African Bronze Honey
1/3 cup coconut oil
2 eggs
1-1/2 tsp vanilla
1/4 cup tart sweet cherries
1/4 cup cranberries
1/3 cup sweetened coconut
1/3 cup slivered almonds
1/4 cup undsalted sunflower seeds
1/4 cup unsalted pumpkin seeds


Put it together...

Cook quinoa according to directions, drain excess water, let cool while preparing other ingredients. In a large bowl combine almond flour, spelt flour, flax meal and baking soda. In another bowl combine mashed bananas, honey, coconut oil, eggs, vanilla, cherries, cranberries, coconut, almonds, sunflower seeds and pumpkin seeds. Add cooled quinoa to dry ingredients. Fold in contents of other bowl. Grease a 9 x 13 inch pan with coconut oil. Pour in batter and bake at 350 degrees for 30 - 40 minutes or until edges are golden brown. Cool and slice into bars.
