Recipe: Vegan Raspberry Peach Coconut Chia Pudding Parfait


Makes Two

You will need...

  • 1 cup coconut yogurt
  • 4 tbsp chia seeds
  • 1 cup coconut milk plain, regular
  • 1 cup raspberries, divided
  • 1 peach, peeled, sliced and lightly smashed
  • 2 tbsp honey or maple syrup
  • 2 tbsp coconut cream

Put it together...

Mix together chia seeds, coconut milk, honey/maple syrup and coconut yogurt. Cover and place in fridge for 4 hours. In parfait glass layer: 1/4 of the raspberries, 1/4 of the chia pudding mix, 1/2 of peach, 1/4 of chia pudding mix, top with 1/4 of the raspberries. Repeat for the second parfait. Refrigerate until ready to serve. Drizzle coconut cream over parfaits.
