Recipe: Vegetarian Minestrone Soup

Our Vegetarian Minestrone Soup was a huge hit at our Empty Bowls Fundraiser! Very flavourful, with nutty wild rice instead of pasta (but you can substitute your favourite pasta!)

You will need...

4 tablespoons olive oil
¾ cup chopped onion
½ cup chopped celery
¾ cup diced carrots
1 19 ounce can Eden Organic Cannellini beans
1 cup shredded cabbage
1 796ml can Ontario Natural Diced tomatoes
1 tablespoon tomato paste
2 L Pacific Vegetable Broth
2 cloves garlic minced
2 tablespoons dry parsley
1 teaspoon basil
1 teaspoon oregano
½ cup pasta or pre-cooked wild rice
Sea salt and ground black pepper to taste


Put it together...

In a heavy bottomed pot heat the olive oil. Add the onion, celery and carrots: sauté until onion and celery has softened. Add beans, cabbage, tomatoes, tomato paste, stock, garlic, parsley, basil, oregano and salt. Bring to a boil, cover and reduce heat. Simmer for approximately 1 hour or until vegetables are barely tender. Add the pasta or rice; simmer for another 20 minutes more. Taste to adjust the seasoning. Serve hot with grated Parmesan cheese.
