Using puff pastry (from our freezer section) makes this a quick and easy dessert.
Apple Strudel

Besides using almonds in the filling I sprinkled sliced almonds over the pastry before baking. You can also sift a little icing sugar on top for a finishing touch after baking and before serving.
Ingredients

1 sheet of puff pastry, thawed but still cold

2 c diced apples (I used honey crisp and Mcintosh)

squeeze of fresh lemon juice

1/3 c raisins or dried cranberries

1/4 c chopped nuts (whatever you have or like, I used sliced almonds)

1/4 c brown sugar

1 tsp cinnamon

1/4 tsp nutmeg

1 tbsp flour

1 beaten egg

turbinado sugar
Directions
Preheat the oven to 400°F. Place parchment paper on a baking sheet.
Combine the apples and lemon juice. Add the raisins (or cranberries), nuts, spices and flour. Stir gently to combine.
Place the pastry onto parchment paper. Lightly mark the pastry into 3 columns, make the centre one a little wider. Cut slits on the outer sections.
Place the apple mixture on the middle section. Fold the top and bottom of the pastry over the filling, then pull the strips across the filling and press them gently in the centre. Brush with the beaten egg, sprinkle with the turbinado sugar, and sliced almonds if using. Bake for 30-35 minutes until golden brown. Serve with ice cream or whipped cream.
