Baked Macaroni and Cheese with Broccoli and Cauliflower

A delicious one pan meal, nice served with a salad on the side. Great with 2 cups cooked chicken added in. I have also added sautéed onions, but it's optional for this recipe.

Ingredients

8 oz. dried pasta

1 1/2 c each broccoli and cauliflower florets

3 tbsp butter

1/4 c flour

2 c milk
-
1 tbsp Dijon mustard

2 c grated cheddar

salt and pepper to taste

1/2 c Panko bread crumbs

1 tbsp melted butter
-
1 minced garlic clove
-
2 tbsp parmesan cheese
TOPPING
Directions
Cook pasta according to package directions. Add broccoli and cauliflower during the last 5 minutes of cooking time. Drain and let cool.
Melt butter, add flour and cook for 1 minute, stirring constantly. Slowly whisk in milk, cook for 2-4 minutes, whisking the whole time. Add cheese, stir until melted, stir in the dijon mustard, season to taste. Add to cooked pasta and vegetables. Spoon into a baking dish or sheet pan.
Combine topping ingredients, spoon over pasta. Bake at 350°F for 20-30 minutes. Serve.
