Balsamic Grilled Vegetables

These vegetables make great left overs for a pasta dish during these hot summer days!
Ingredients

2 peppers, diced

2 zucchini, cubed

1 red onion, cut into chunks

1/4 c olive oil

3 tbsp balsamic vinegar

1 garlic clove,minced

1 tsp fresh rosemary, finely chopped

1/2 tsp each salt and pepper
Directions
Place the vegetables in a bowl, toss with half of the dressing. Let stand for 10 minutes.
Place into a grill basket and grill for 10-15 minutes. Toss with the remaining dressing.
Recipe Note
Throw into your favourite shaped pasta, and add any desired additional ingredients (crumble feta, diced tomatoes, lemon zest, and fresh basil were used in the recipe pictured). Can serve at room temperature, cold, or slightly warm.
