An easy recipe this week to showcase the beautiful garlic scapes in season now. Great on top of a grilled steak, use to sauté vegetables, on a toasted baguette or warm biscuit, in mashed potatoes.

Garlic Scape Spread

If you have some leftover scapes stir them into some mayonnaise. Great on burgers or a sandwich. 

Ingredients

  • 1/2 c finely processed garlic scapes
  • 1/2 c soft butter
  • 1/2 tsp lemon zest
  • pinch of salt if using unsalted butter 

Directions

  1. Combine ingredients.

  2. Divide into 2 tbsp amounts onto parchment paper.

  3. Freeze. Once frozen, place in a plastic bag to keep while frozen.

  4. Defrost when ready to use.
