Black Bean & Sweet Potato Stew

To vary this dish, substitute kidney beans, pinto beans, or a mix of types for straight black beans. Try butternut squash or yams for the sweet potatoes.
Ingredients

3 tbsp oil

1 cup onion, diced

1 green or red pepper, diced

2-3 garlic gloves, chopped

2 tsp chili powder (I used top chipotle chili powder)

1 tsp cumin

1 1/2 cup sweet potato, diced

1 small can diced tomato

1 can black beans
-
2 tbsp cilantro

Salt and Pepper
Directions
Heat oil, saute onion & peppers, 4 min
Add garlic & chili powder & cumin. Cook 1 min
Add sweet potato. Cover & cook 10 min
Add tomatoes & beans, simmer 10 min
Season with cilantro, top with sour cream
Recipe Note
I added left over cooked chicken. Corn would be a great addition also. Serve with rice or tortillas.
