Blood Orange Squares

A twist on traditional lemon bars, this is a smooth, tart and sweet treat. The crust may seem a little too " buttery" when pressed into the pan but bakes into a chewy base. Next time I make them I am going to try grapefruit. Can't wait!
Ingredients

1/2 cup butter, melted

1 tbsp zest from blood orange

1/3 cup sugar

2 tsp vanilla

1/2 tsp sea salt

1 cup all purpose flour

4-6 blood oranges, juiced to make 1/2 cup

1 tbsp zest from blood oranges

3 eggs

3/4 cup sugar

1 tsp cream of tartar

1/2 tsp sea salt

1/4 cup flour

Icing sugar

Directions
Mix together all Ingredients for crust. Press into an 8" x 8" pan lined with parchment paper. Bake at 350F for 25 minutes. Remove and use a fork to gently poke halfway through baking.
Whisk together the eggs, zest, sugar, cream of tartar, and salt. Add the juice, mix, gradually whisk in the flour. Pour the filling over the crust. Bake until lightly browned and set in the middle, about 20-25 minutes. Remove and cool for 1 hour. Chill for 1 hour.
Dust lightly with icing sugar. Cut into 12 bars, then cut each bar in half again to make triangles.
