Boxty (Irish Potato Pancakes)

Ingredients

1 c leftover mashed potatoes

1 ¼ c grated raw potatoes

¾ c flour

1 tsp baking soda

½ tsp salt

½ cup buttermilk

Directions
Preheat oven to 300°.
Combine grated potatoes and flour, baking soda and salt. Mix. Add the mashed potatoes, stir until combined. Add the buttermilk.
Heat oil in a skillet. Add a heaping spoonful of the potato mixture, flatten to a 2" round. Add 2 or 3 more spoonfuls, whatever will fit in your pan. Cook over medium heat until golden, about 4 minutes per side. Flip 3-4 times to ensure cooking through. Remove and place in a warm oven. Cook another batch. Should make about 8 pancakes.
Serve with sour cream and chopped chives or green onions
