They are a great breakfast on the go or pick me up in the middle of the day.
We took them on a road trip to visit family and they were a great snack in the car.

These cookies taste just like carrot cake, so if you wanted to make them into more of a dessert treat you could drizzle a cream cheese icing over top.
Ingredients

1 c rolled oats, I used large flake

1/2 c whole wheat flour

1/2 c white flour

1 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

1/2 tsp ground ginger

1/2 tsp ground cloves

1 1/2 c grated carrots

1 c chopped pecans

1/4 c raisins

1/4 c coconut
-
1 egg
-
1/2 c maple syrup

1/2 c melted coconut oil
Directions
Combine the dry ingredients. Add the carrots, pecans, raisins and coconut.
Mix the egg, maple syrup and coconut oil. Stir into the rest of the ingredients, mix well.
Scoop 1/4 c of dough onto a parchment lined cookie sheet.
Bake at 375°F for 15-17 minutes. Cool on the pan for 8-10 minutes, then carefully transfer onto a cooling rack. These cookies freeze well.
