Broccoli & Cauliflower Cream Soup

This bewitching brew has a secret protein and fibre kick and a slightly spicy, satisfying creaminess.

You will need...

20g Renew Life Organic Clear Fibre
22g Natural Factors Unflavoured Whey Factors Protein Powder
2 tbsps coconut oil
1/2 cup chopped cooking onion
3 small cloves garlic, minced
4 cups chopped washed and drained brocolli
4 cups chopped washed and drained cauliflower
1 litre Pacific low sodium vegetable broth
1 bag (227g) washed spinach
1/2 tsp ground nutmeg
1 tsp each Salt and Pepper

Put it together...

Whisk Renew Life Organic Clear Fibre into 1 cup room temperature water, set aside. Whisk Natural Factors Unflavoured Whey Factors Protein Powder into 1/2 cup room temperature water, set aside.

In a large pot over medium heat melt coconut oil. When heated, add onion and garlic, saute until onion is translucent.

Add broccoli and cauliflower. Stir to coat lightly with coconut oil. Add Pacific broth. Bring everything to a boil, turn down heat and let soup simmer until the vegetables are tender.

Stir in spinach and salt and pepper. Cover, return to simmer until spinach has wilted into the soup. Remove from heat and with immersion blender or food procesor puree the pot of soup. When the soup is the texture you like stir in the fibre and protein powder. Add nutmeg. At this point you can eat the soup just as is, or add some grated parmesan cheese, a garnish of cilantro, or a tbsp of Quark dropped into the centre of your bowl.
