Caramelized Onion Dip

We served this delicious dip to the members of TOPS (Take Off Pounds Sensibly) who took a tour of our store. This dip is based on 2% Greek Yogurt. Why 2%? As we told TOPS, fat content is essential in a dairy product to help your body absorb the calcium and Vitamin D. Nutritionally, it's much better for you!

You will need...

1x500g container Skotidakis or Liberte 2% Greek Yogurt
1 ½ cups sweet onion chopped into small pieces (I used 1 medium sweet onion and 1 small red onion)
1 tsp Perth Pepper and Pestle liquid smoke original flavour
2 tsp mild good quality mustard
2 tablespoons Foodsmiths Bulk Olive Oil
1 tablespoon finely minced chives or green onions
Salt and pepper to taste. Dash of dried parley.

Put it together...

Heat olive oil in a skillet over medium heat, add onions. Cook until onion is golden brown (adjust the heat if necessary so the onion does not burn. Slow cooking gives a better result). Add liquid smoke and continue to cook until the onion is a dark rich colour, again be careful not to burn the onion. Remove from heat and let cool once you have the colour you like.
In a bowl stir together the yogurt and mustard.  Add the cooled onion and smoke mixture. Stir until everything is combined. Fold in the minced chives, stir lightly to combine. Add salt and pepper to your taste. Garnish with dried parsley. Serve with Fit N Light CRISPBREADS, or grilled pita or flatbread.
