Cathy's Mexican Slaw

Love this fresh, crunchy salad you can adjust for spiciness. (I prefer spicier!) This is a great side kick to leftover turkey, or turkey tacos!

  • 1 Bag of Patchwork Garden Organic Coleslaw Medley, or 300g of your favourite shredded coleslaw mix
  • 1/2 Red Pepper, chopped
  • 1/2-1 Cob of Corn, cooked and cut from the cob (grilled corn is the best, or you can use frozen corn, about 1/2 cup approximately)
  • 1/4 cup cilantro, chopped

Dressing

  • Whisk all ingredients together:
  • Zest from 1 lime
  • 1/4 cup lime juice
  • 2 tsp sugar or honey
  • 1/2 to 3/4 tsp Cumin (adjust to taste)
  • 1/2 tsp salt
  • 1/4 cup Olive Oil from our Bulk

Place all vegetables in a large bowl, pour dressing over top, cover and refrigerate overnight.
