This is the second of two salad recipes I am featuring this week that are perfect side dishes on these warm summer days. Crunchy and refreshing and both made with raw ingredients, so no extra heat in your kitchen.
Cauliflower Salad

These salads make a wonderful side dish to your favourite BBQ meal. Cooked diced bacon would be a great addition.

Ingredients

1 cauliflower, chopped into bite size pieces (4-5 cups)

1/3 c roasted almonds, chopped

1/3 c chopped italian parsley

1/3 c chopped basil

1/3 c sundried tomatoes, thinly sliced

1/3 c red onion, thinly sliced

1/3 c kalamata olives, roughly chopped

1/4 c olive oil

3 tbsp lemon juice
-
zest from 1 lemon
-
1 garlic clove, minced
-
1 tsp dijon mustard
-
salt and pepper
-
pinch of chili flakes
Dressing
Directions
Combine the salad ingredients in a large bowl. Whisk the dressing ingredients and pour over the salad. Toss well and let it sit for an hour before serving.
