Chicken, Cheese & Bacon Casserole
1 tablespoon Olive Oil
2 cloves Garlic crushed
1 small Onion diced
1 teaspoon Salt
1 pound Ground Chicken
8 ounces Bacon cooked and roughly chopped
¼ tsp Fresh Oregano roughly chopped
1 cup Cheddar Cheese shredded
2 large Eggs
½ cup Sour Cream
¼ cup Heavy Cream
½ teaspoon Pepper ground
Preheat the oven to 180C/355F.
Place a large nonstick frying pan over high heat and add the oil, garlic, onion, and half the salt. Saute until translucent.
Add the ground chicken and brown. Remove from the heat and stir through the bacon and oregano.
Pour the mixture into a casserole dish and sprinkle over the cheddar cheese.
In a bowl, add the eggs, sour cream, cream, remaining salt, and pepper, whisk together.
Pour over the chicken mixture.
Bake for 20-30 minutes until golden brown.
Cut into 6 pieces and serve with a side of Fresh Green Beans.
