Chocolate Caramel Pecan Bars

Ooey, gooey caramel, chocolatey bars. You could also roll the dough into a round pan and serve as a tart.
Ingredients

½ lb butter

½ c sugar

1 egg

2 ½ c flour

¾ c chopped pecans

1 c sugar

¼ tsp lemon juice

¼ tsp cold water

¾ c whipping cream

2 tbsp butter

1 tsp vanilla

¼ - ½ tsp salt

½ c chopped semi sweet chocolate

¼ c whipping cream

Directions
Sweet Dough
In a stand mixer mix the butter and sugar until well combined. Add the egg and mix. Add the flour and mix well.
Roll the sweet dough and place in tart pan with a removable bottom. If you don't have one use an 8" square pan lined with parchment paper.Sprinkle the bottom with chopped pecans. Refrigerate until ready to fill.
Caramel Sauce
Combine in a heavy bottom saucepan: sugar, lemon juice and water. Bring to a boil over medium high heat cook without stirring until it is starting to change colour. Swirl the pan until it is medium amber in colour. Remove from the heat.
Slowly add the cream, stir until smooth. Add the butter, stir until melted. Add the vanilla and salt. Let cool. Pour over the pecans in the crust. Bake at 350° for 30-35 minutes until the caramel is bubbly and the crust is golden brown. Remove and let cool for 20 minutes.
Chocolate Topping
Heat the cream until simmering. Add the chocolate and stir until melted.
Pour over the cooled tart. Spread to the edges. Top with chopped pecans. Slice into pieces.
