Coconut Tofu Fingers with Salad

Easy to make meal for under $20.
Ingredients

1 pkg extra firm Tofu, pressed to remove extra moisture

1 egg
-
2 tbsp flour
-
1 tbsp cornstarch
-
1 tsp water
-
1 c unsweetened coconut
-
1 bottle of Siam Chilli Pineapple Sauce for dipping

1 pkg. Salad Kit
Directions
Cut tofu into 16 fingers. Place on a kitchen towel on a tray to drain. You can place something heavy on top to help.
Whisk the egg, flour, cornstarch and water in a shallow bowl.
Place the coconut into another shallow bowl.
Dip the tofu into the egg mixture, then the coconut.
Place on a parchment paper lined baking sheet.
Bake at 375° for 20 minutes. Turn every 5 minutes.
Serve with the dipping sauce and a salad.
