The easiest way to have tacos with the rest of the family is to make some Cottage cheese flatbread. The flatbread is a high protein, low-carb recipe of your dreams made with just 2 ingredients plus spices.

Ingredients

1 cup cottage cheese

2 eggs

¼ teaspoon Redmond salt

½ teaspoon Cajun seasoning
Directions
Add cottage cheese, eggs, and spices into a blender.
Blend until smooth in a personal blender or small food processor. In my blender, it only took about 20 seconds.
Line a sheet pan with parchment paper and spritz it with non-stick spray. Pour the cottage cheese batter into the sheet pan and smooth it into an even layer.
Bake at 350°F for about 30 minutes or until cooked through in the center. It will be golden brown on the edges. Remove the flatbread from the oven and allow it to cool completely before enjoying it.
Recipe Note
* I made the flatbread for tacso, but you could use this recipe for your sandwiches for lunch or even for pizza. Just change the Cajun seasoning to Italian seasoning.
