FATHER'S DAY MENU!

Ingredients

Hayter's Turkey (from our freezer section)

1/2 bunch asparagus, cleaned and cut into 2" pieces

2 mini cucumbers, washed and cut into chunks

1 c grape or cherry tomatoes, cut in half (or diced tomato)

1 c arugula or other salad greens, washed
-
1/4- 1/2 c thinly sliced red onion (soak in cold water for 10-15 minutes, then drain)

1 c chickpeas, drained and rinsed

1/4 c crumbled feta
-
6 eggs
-
1 c white sugar
-
1 tsp vanilla
-
1 c flour (gluten free if needed)
-
1/2 tsp baking powder
-
pinch of salt
-
1/4 c melted butter
-
2 cups washed and sliced strawberries
-
1 1/2 tbsp sugar
-
2-3 tsp balsamic vinegar
-
few grinds of fresh black pepper
-
4 fresh basil leaves, slivered

Directions

Grill according to package directions.
Chopped Asparagus and Arugula Salad
Steam the asparagus for 2-3 minutes, drain and submerge in a bowl of ice water. Cool and drain. You want the asparagus to still have a bit of a crunch.
Arrange all ingredients in a large bowl or serving platter. Drizzle with your favourite salad dressing, a lemon or balsamic based vinaigrette is great. Toss and serve.
Sponge Cake with whipped cream and Strawberries
Sponge Cake
Preheat the oven to 325° Line 2 8 or 9" pans with parchment paper.
Beat the eggs in a stand mixer until foamy. Gradually add the sugar, then beat at high speed for 8-10 minutes. Add vanilla. Mix the flour, baking powder and salt together, sift 1/3 of the mixture over the eggs, fold in and repeat 2 more times. Fold in the melted butter.
Divide the batter between the pans. Bake for 15-20 minutes. Let cool in the pan for 10 minutes.
Strawberries
Combine strawberries and sugar. Let sit for 15 minutes. (Optional: Add balsamic vinegar, black pepper and basil if using)
This is very good with just the sugar as well.
Place cake on a serving platter. Top with 1- 1/2 cup whipped cream, and spoon strawberries on top.
I often just use one layer of cake and freeze the other layer. Then I always have an emergency cake on hand for a last minute dessert.
