Fresh Strawberry Kefir

Kefir is a delicious fermented drink, traditionally made from cow’s milk or goat’s milk. It is a rich and diverse source of beneficial probiotics to nourish your gut and support digestion. And it is so easy to make!

Here’s what you’ll need:

  • 1 litre glass bottle or jar
  • 1 litre organic milk
  • Kefir Starter packet (Foodsmiths sells Yogourmet brand, which you can find in our dairy cooler)
  • 1 cup fresh strawberries (or fruit of your choice)

Follow the directions on the Kefir starter package. The Yogourmet package instructions are to use 5g of starter per litre of milk. One box has six individual 5g packets; enough to make 6 litres of kefir.
Heat 1 litre of milk to 180 degrees F on the stovetop, whisking frequently. Immediately remove milk from heat, and let cool to 73-77 degrees F. Pour one 5g packet of kefir starter into cooled milk, and whisk well until completely dissolved. Pour mixture into your glass bottle or jar, seal, and let stand at room temperature until curd forms (approximately 24 hours). Refrigerate to stop the fermentation process, and always store prepared kefir in the fridge.
Blend your prepared kefir with fresh strawberries, and enjoy!
